I first tried shallow fried Garlic Lemon & Rosemary Chicken at a friends house. She served it with a side of stir-fried baby potatoes, mushrooms and asparagus. The meal was, of course, delightful. The preparation was simple, cooking time barely 15 minutes and the final product was so appetizing!
The other day, browsing recipes on the internet, I came across a grilled version of this dish. Although it seems equally simple and delicious I’m going to share my friend’s take on this recipe.
4 pieces of skinless boneless chicken (Thighs & breast )
3 cloves garlic
3 tbsp Olive Oil
4 tbsp butter (room temperature)
1/2 cup fresh rosemary
6 cloves garlic
Juice of 3 lemons
salt and pepper to taste
1. To make the marinade: Mix the butter, rosemary, garlic, and lemon juice in a bowl.
2. Smash the chicken flat. Pour marinade to the chicken, and add salt and pepper. Marinate it n your refrigerator for 30 minutes.
3. Then stir fry on a high flame with olive oil and garlic till the chicken done, and is golden brown from both sides.
Serve with a side of your choice!
This has become one of my favourite meals for a busy weeknight. Many times I let the chicken marinate for 5-6 hours to let the juices mix together. This fragrant chicken dish is always a super hit. Try it at home, and tell me what you think!
